Ingredients
2 chicken breasts
300g Saitaku Pre-cooked Ramen Noodles
3 cloves of garlic
400ml coconut milk,
400ml chicken broth
2 heaped tbsp crunchy peanut butter
1 tbsp Thai red curry paste
1 tbsp Saitaku Sushi Soy Sauce
Chilli oil, to taste
For the Garnish:
Coriander
Lime wedges
Sesame seeds
Mangetout.
Instructions
Sear the chicken in a large pan until golden on both sides, then remove and set aside. In the same pan, stir together the Thai red curry paste, Saitaku Sushi Soy Sauce, and peanut butter until combined, then add in the garlic to cook for 1-2 minutes.
Whisk in the coconut milk and chicken stock until the broth is silky.
Toss the Pre-cooked Ramen Noodles directly into the pan – no separate boiling required! They’ll soak up that creamy peanut broth right away.
Slice your chicken once it’s cooled to rest just a little, ensuring it’s cooked through.
Dish up the noodles and broth, then top with your sliced chicken, mangetout, fresh coriander, and a splash of chilli oil. Finish with lime and sesame seeds and enjoy while hot!
