Perfect midweek meal

Super fast and easy to make, this vegetarian-friendly dinner is a great option for those waiting to get food on the table quickly, but still create something nutritious and delicious!

Ingredients

For the tofu marinade:

  • 4 tbsp Soy Sauce
  • 1 block tofu
  • 3 tbsp Rice Vinegar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp black pepper
  • ¼ tsp paprika
  • 2 tbsp water

For the stir fry:

  • spring onion
  • 2 tbsp White Roasted Sesame Seeds
  • 1 pack Udon Noodles
  • carrot, sliced into thin strips
  • 1 tbsp sesame oil
  • 2½ tbsp Soy Sauce
  • 2 tbsp oyster sauce
  • 1 tbsp Mirin
  • 2 tbsp brown sugar
  • ½ tsp Rice Vinegar

Instructions

  1. Combine all of the ingredients for the tofu marinade, and allow this to sit for 30 minutes.
  2. In the meantime, prepare the stir fry sauce by combining the soy sauce, oyster sauce, mirin ,brown sugar and rice vinegar in a bowl.
  3. Add the udon noodles to a large, deep pan of boiling water. Bring the pan back up to a boil and then simmer for 8 minutes, before rinsing with cold water and draining the noodles.
  4. Heat a pan over a high heat and add the sesame oil. Add in the marinated tofu, the stir fry sauce, carrot, spring onion, and sesame seeds, and cook until soft and golden. Add the noodles and continue stir frying until well combined.
  5. Serve up and enjoy!
