Not a dessert person? Try these sushi donuts instead as a snack or to impress at your next party.

Ingredients

For the rice:

  • 250g Sushi Rice
  • 5 tbsp Rice Vinegar
  • 1 tsp salt

For the toppings:

  • 1 avocado
  • 1 cucumber, thinly sliced
  • White Roasted Sesame Seeds
  • Black Roasted Sesame Seeds
  • smoked salmon, thinly sliced
  • radish, thinly sliced
  • Wasabi Paste

This recipe requires a donut tray.

Instructions

  1. Place a pot on the stove and add the Sushi Rice and 350ml of cold water. Cover the pot, bring it to a boil and simmer for 10 minutes.
  2. While the rice is cooking, prepare your vegetables and salmon. Using a peeler, slice long thing strips of cucumber lengthwise, slice similar sized slices of avocado and salmon and cut thin rounds of radish. Put your vegetables and salmon to one side.
  3. Once the rice is cooked, turn off the heat but keep the lid on and leave the rice to rest for 15 minutes. After that time has passed, remove the lid and fluff the rice with a fork or a rice paddle.
  4. Mix together the rice vinegar and salt, and pour these over the rice while still hot, mix well. Cover with a damp tea towel and set aside at room temperature until ready to use.
  5. To assemble the sushi donuts, you will need a donut tray. You will add your toppings to the mould first as this will form the top of the sushi donut.
  6. Begin by sprinkling in some sesame seeds, then layer your salmon, cucumber, avocado and radish on top of the sesame seeds.
  7. Next add a layer of sushi rice, filling the donut mould to about half way. Add a layer of wasabi to the rice and then finish by completely filling the mould with sushi rice.
  8. Leave to chill for 10 minutes, push the sushi donuts gently out of the tray and enjoy!
