This Crispy Rice Salad recipe is quick and easy to make.

Ingredients

  • 75g Saitaku Sushi Rice
  • 1 tsp Saitaku Soy Sauce
  • 1/2 tbsp sesame oil
  • 1 tbsp chilli crisp
  • 1/2 large cucumber, sliced
  • 80g shelled edamame
  • 1 avocado, chopped
  • 80g salted peanuts, chopped
  • Spring onions & mint, chopped

For the dressing:

  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 1 ½ tbsp tahini
  • 3-4 tbsps maple syrup
  • 1 clove garlic
  • ½ tbsp cumin

Instructions

  1. Cook your Saitaku Poke Rice as per the packaging instructions. Toss the rice with Saitaku Soy Sauce, chilli crisp, and sesame oil.
  2. Air fry at 180°C for 20 mins, or keep checking until golden and crispy.
  3. Chop your greens, herbs, and avocados.
  4. Toss in a bowl with edamame and peanuts.
  5. Mix all dressing ingredients until creamy.
  6. Pour the dressing over the salad, add the crispy rice last for maximum crunch, and toss! ✨
