Did you know that in Japan, it’s tradition to eat fried chicken at Christmas?🎄 So here is our Air Fryer Karaage Chicken, featuring Saitaku Rice Vinegar for that perfect tangy balance ❤️‍🔥

You’ll need 👇
500g skinless, boneless chicken thighs (cut into bite-sized pieces)
1½ tbsp Saitaku Sushi Soy Sauce
½ tbsp Saitaku Rice Vinegar
1 clove garlic, minced
1 tsp ginger paste
½ tsp sesame oil
50g cornflour
Vegetable oil

Method👇
Slice chicken into bite-sized pieces and place in a bowl.
Add garlic, ginger, Soy Sauce, sesame oil, and Rice Vinegar. Mix well and marinate for 30 minutes.
Preheat your air fryer to 200°C for 5 minutes.
Coat the marinated chicken in cornflour until evenly covered.
Place pieces in a single layer in the basket, brush with oil, and air fry for 20–25 mins at 200°C - flipping halfway and coating with more oil.
Serve with Spicy Japanese Mayo

Cosy up this festive season with a Miso Hot Chocolate - a sweet-meets-savoury twist on a winter classic 🎁✨ Saitaku Miso Paste adds a touch of umami that makes every sip richer, creamier, and downright magical❄️

You’ll need 👇
230ml milk (this may change depending on your mug)
1 tbsp maple syrup
1 tbsp cocoa powder
1 heaping tsp Saitaku Miso Paste
1 tbsp dark chocolate
To serve: marshmallows & shaved chocolate 🍫

Method 👇
Warm the milk gently in a saucepan.
Whisk in cocoa, maple syrup, and dark chocolate until silky smooth. Reduce heat and whisk in Miso Paste until dissolved.
Pour into your favourite festive mug and top with marshmallows and shaved chocolate.

Perfect with a slice of peperkoek or a few pepernoten - the ultimate pairing for a night by the fire❤️‍🔥

Crispy outside, fluffy inside, and packed with flavour - this is Saitaku’s take on one of Japan’s favourite street snacks, Takoyaki!🐙

Ingredients👇
2 green onions, thinly sliced
1 tbsp Saitaku Sushi Ginger
100g boiled octopus (or try sausage, cheese, or corn!)
2 tbsp oil

For the batter:
120g all-purpose flour
2 tsp baking powder
½ tsp salt
2 large eggs
1 tsp Saitaku Soy Sauce
350ml chicken or vegetable stock

To serve: Saitaku Mayo and Saitaku Nori Snack, finely crushed
Optional: bonito flakes

Method👇
Mix flour, baking powder, salt, eggs, soy sauce, and dashi to make a smooth batter.
Heat your takoyaki pan (or muffin tray) in an oven at 200°C and brush with oil. Pour in the batter.
Add octopus pieces, green onion, and red ginger into each mould.
Bake for 8 minutes before flipping gently. Bake for a further 10-12 minutes until golden and fluffy.
Finish with Saitaku Mayo and crushed Nori Snack (and bonito flakes if you have them).
Enjoy them hot and fresh - the true taste of Japan in every bite!💖

Our take on a Japanese street-food classic, Okonomiyaki (Japanese Savoury Pancakes!)🎌 Crispy, cabbage-packed, and a beloved street food favourite across Japan. Try this local hit with our easy at-home recipe💥

You’ll need👇

For the pancake mix:
250g finely shredded cabbage
125g chopped spring onions
150g Saitaku Panko Breadcrumbs
¾ tsp salt
4 eggs, beaten

For the sauce:
1½ tbsp ketchup
½ tbsp Worcestershire sauce
2 tsp honey
1 tsp Saitaku Soy Sauce
For toppings:
Saitaku Sushi Ginger
Saitaku Sushi Nori
Saitaku Japanese Mayo

Method 👇

Mix pancake ingredients until combined. The texture will be loose and cabbage-heavy, let it sit for 10 minutes to absorb if needed. While waiting, whisk together the sauce ingredients until well combined.
Heat a pan over medium heat and brush with olive oil. Scoop ¼ cup of the mix into the pan and flatten gently to ½ inch thick. Cook 3 minutes each side or until golden and crisp. Repeat for remaining mix.
Serve the pancakes with a generous coat of sauce. Drizzle Saitaku Japanese Mayo, then top with Saitaku Sushi Ginger and thin strips of Saitaku Nori. Add extra spring onions if you like, and enjoy while hot!🔥

Quick, cosy, and packed with flavour - these Peanut Udon Noodles are pure comfort for chilly days. Save this recipe for when you need something warm, easy, and seriously satisfying ❄️🍜

Ingredients👇
225g Saitaku Udon Noodles
4 tbsp natural peanut butter
1 clove garlic crushed
1 tbsp Saitaku Soy Sauce
1 tbsp Saitaku Rice Vinegar
1 tbsp brown sugar or maple syrup
1 tsp sesame oil
1 tsp chilli sauce
2-3 tbsp hot water
For serving: Crushed peanuts, chilli oil, and green onions

Method👇
Boil a large pot of water, and cook the Udon Noodles according to packet instructions. Drain the water.
In a small bowl combine peanut butter, garlic, Soy Sauce, Rice Vinegar, sugar, sesame oil, and chilli sauce. Whisk together until a thick paste forms, then add measure of hot water and whisk until a thick sauce forms and the sugar has dissolved.
Pour the peanut sauce over the noodles and mix well. Gently heat the noodles over medium low heat before serving, adding slightly more Soy Sauce to taste.
Serve topped with green onions, crushed peanuts, and a drizzle of chilli oil.

Spice meets soul in this deliciously creamy and fiery Tantanmen Ramen❤️‍🔥 Prep the grocery list & let’s get cooking!👩‍🍳

Ingredients👇
225g ground pork
1 tbsp Saitaku Mirin
1 tbsp minced ginger
1 tbsp vegetable oil
1 tbsp Saitaku Miso Paste
2 tbsp chilli oil
2 cloves garlic, minced
30ml Saitaku Sushi Soy Sauce
2 tbsp peanut butter
1 tsp Saitaku Rice Vinegar
1/2 tsp sugar
470ml chicken stock
470ml unsweetened oat milk
280g Saitaku Precooked Ramen Noodles
2 spring onions, chopped

Method👇
Combine pork, Mirin, and minced ginger. Set aside for 15 minutes to marinate.
In a separate bowl, whisk together Soy Sauce, peanut butter, Rice Vinegar, sugar, and 1 tbsp of chilli oil until smooth. Set aside.
Combine chicken stock and oat milk in a pot, and bring to a simmer. Cover to keep warm. Also bring a large pot of water to a boil for the noodles.
Heat a wok with oil over medium high heat. Add marinated pork and brown until there are crispy bits. Add Miso Paste, 1 tbsp of chilli oil, and minced garlic, and cook for another minute. Turn off the heat and set aside.
Heat noodles according to package directions.
For serving, add half of the sesame mixture and half of the hot stock to each bowl and combine. Add the Precooked Ramen Noodles, and top with pork and chopped green onions.

Craving something fresh and full of flavour? This Japanese-Inspired Poké Bowl comes together easily with our pre-cooked Poke Rice, just add your favourite toppings and dig in! 😋

Ingredients (serves 2) 👇
1 tbsp sesame oil
350g chicken thighs, boneless & skinless, diced
4 tbsp Saitaku Teriyaki Sauce
2 spring onions, sliced
2 pots of Saitaku Pre-cooked Poke Rice
2 handfuls of pea shoots
1 carrot, grated
Fresh lemongrass, grated
1 lime, juiced
1 tsp garlic puree
Saitaku White Roasted Sesame Seeds
Black onion seeds (optional)

Method 👇
Add sesame oil to a pan, then add chicken, garlic, lemongrass, and fresh lime juice.
Cook on a medium heat until chicken is cooked through.
Once chicken is cooked, add your Teriyaki Sauce and keep on heat for a few minutes.
Whilst the chicken is simmering, you can microwave the Pre-cooked Poke Rice (60 seconds for each pot).
Start building your bowl; add your rice, chicken, pea shoots, carrot, spring onions, White Roasted Sesame Seeds and black onion seeds. Enjoy!
