No time to roll? No problem!

These fruity nigiri balls are the ultimate lazy dessert sushi. Made with our versatile Saitaku Sushi Rice and topped with a colourful selection of fresh fruit – they are the perfect way to wow your guests without spending hours in the kitchen.

Ingredients

  • 250g Saitaku sushi rice
  • 1 tbsp Saitaku sesame seeds
  • 350ml water
  • 150ml coconut milk
  • 2 tbsp caster sugar
  • Pinch of salt
  • 1 small seedless watermelon
  • 1 mango, sliced
  • Strawberries, halved

Instructions

  1. Cook the sushi rice in water according to package instructions.
  2. While still warm, mix through coconut milk, sugar, and salt. Allow to cool.
  3. Trim the watermelon, mango and strawberries into long, thin rectangular slices
  4. Place bamboo rolling mat on flat surface
  5. Spread an even layer of cooled coconut rice across the mat.
  6. Position the fruit into a long line at one end of the rice.
  7. Roll tightly to form a large sushi roll.
  8. Chill for 20 minutes to help it hold its shape.
  9. Slice into thick sushi-style rounds.
  10. Decorate with sesame seeds.
