Our favourite noodle night recipe

Bright, bold, and nutty!

Ingredients

  • 225g Udon Noodles
  • 4 tbsp peanut butter
  • 1 clove garlic crushed
  • 1 tbsp Sushi Soy Sauce
  • 1 tbsp Rice Vinegar
  • 1 tbsp brown sugar or maple syrup
  • 1 tsp sesame oil
  • 1 tsp chilli sauce
  • 2-3 tbsp hot water
  • For serving: Crushed peanuts, chilli oil, and green onions

Instructions

  1. Boil a large pot of water, and cook the Udon Noodles according to packet instructions. Drain the water.
  2. In a small bowl combine peanut butter, garlic, Soy Sauce, Rice Vinegar, sugar, sesame oil, and chilli sauce. Whisk together until a thick paste forms, then add measure of hot water and whisk until a thick sauce forms and the sugar has dissolved.
  3. Pour the peanut sauce over the noodles and mix well.
  4. Gently heat the noodles over medium low heat before serving, adding slightly more Soy Sauce to taste.
  5. Serve topped with green onions, crushed peanuts, and a drizzle of chilli oil.
