Perfect festive bites filled with sushi rice, smoked salmon, avocado and spring onion – ideal for Christmas sharing.

Ingredients
250g Sushi Rice
5 tbsp Rice Vinegar
1 tsp salt
3 Nori Sheets
150 g smoked salmon, sliced
1 avocado, chopped into small cubes
1 spring onion, thinly sliced
2 tbsp Poke Sauce
2 tsp White Roasted Sesame Seeds
Tray required / Air fryer-safe muffin tray
Instructions
Cook Sushi Rice as per packet instructions.
Cut each Nori Sheet into 4 even squares to create 12 squares in total.
Top each Nori Sheet with 1 heaped spoonful of rice and spread out slightly.
Place the squares into the tray one at a time, pressing down gently so that rice is in the middle and the edges of the nori come up the sides. Air fry for 5 minutes at 180°C (or in an oven at 200°C for 20 min.), or until the nori is crispy.
Remove sushi cups from tray and serve topped with chopped avocado, smoked salmon, spring onion, Poke Sauce and White Roasted Sesame Seeds.
