Quick and easy lunch inspiration

Ingredients

For the bowl:

  • 1 cup Pre-Cooked Poke Rice
  • 1 tbsp Rice Vinegar
  • 200g chicken breast
  • 2 tbsp teriyaki marinade
  • Pinch of salt
  • Poke Sauce for drizzling

Fresh Ingredients (You can substitute in an other fresh items you have in your fridge):

  • 1/2 avocado, sliced
  • 1/2 carrot, shredded
  • 1/2 cup edamame beans, shelled ready to eat

Instructions

  1. If required, combine chicken and teriyaki marinade in a small bowl. Heat a frying pan with oil, cook measure of chicken and then set aside.
  2. Heat Pre-Cooked Poke Rice in microwave as per packet instructions.
  3. In a bowl, mix Rice Vinegar and salt with heated Pre-Cooked Poke Rice.
  4. Top with your teriyaki chicken and all remaining fresh ingredients.
  5. Drizzle a generous amount of Poke Sauce, serve and enjoy!
