Teriyaki Chicken Sushi Muffins
A quick high protein snack
All the best bits of sushi in a muffin!

Serves 3-4
Ingredients
300g chicken breast fillets, finely chopped
4 tbsp Teriyaki Sauce
2 tbsp Poke Sauce
3 Nori Sheets
250g Sushi Rice
5 tbsp Rice Vinegar
1 tsp salt
1 spring onion, thinly sliced
2 tsp White Roasted Sesame Seeds
1 avocado, chopped into small cubes
Muffin tray required
Instructions
Combine chicken and teriyaki marinade in a small bowl.
Heat a frying pan with oil, cook measure of chicken and then set aside.
Cook Sushi Rice as per packet instructions.
Cut Nori Sheets into 4 even squares to form 12 squares in total.
Top each Nori Sheet with 1 heaped spoonful of rice and spread out slightly.
Place the squares into the muffin tray one at a time, pressing down gently so that rice is in the middle and the edges of the nori come up the sides.
Top evenly with cooked chicken. Air fry until nori is crisp.
Remove sushi muffins from pan and serve topped with Poke Sauce, chopped avocado, spring onion and White Roasted Sesame Seeds.
