Perfect festive bites filled with sushi rice, smoked salmon, avocado and spring onion – ideal for Christmas sharing.

Ingredients
250g Sushi Rice
5 tbsp Rice Vinegar
1 tsp salt
3 Nori Sheets
150 g smoked salmon, sliced
1 avocado, chopped into small cubes
1 spring onion, thinly sliced
2 tbsp Poke Sauce
2 tsp White Roasted Sesame Seeds
Tray required / Air fryer-safe muffin tray
Instructions
Cook Sushi Rice as per packet instructions.
Cut each Nori Sheet into 4 even squares to create 12 squares in total.
Top each Nori Sheet with 1 heaped spoonful of rice and spread out slightly.
Place the squares into the tray one at a time, pressing down gently so that rice is in the middle and the edges of the nori come up the sides. Air fry for 5 mins, or until the nori is crisp.
Remove sushi cups from tray and serve topped with chopped avocado, smoked salmon, spring onion, Poke Sauce and White Roasted Sesame Seeds.
