Sushi Cups with Smoked Salmon

Perfect festive bites filled with sushi rice, smoked salmon, avocado and spring onion – ideal for Christmas sharing.

Ingredients

  • 250g Sushi Rice
  • 5 tbsp Rice Vinegar
  • 1 tsp salt
  • 3 Nori Sheets
  • 150 g smoked salmon, sliced
  • 1 avocado, chopped into small cubes
  • 1 spring onion, thinly sliced
  • 2 tbsp Poke Sauce
  • 2 tsp White Roasted Sesame Seeds
  • Tray required / Air fryer-safe muffin tray

Instructions

  1. Cook Sushi Rice as per packet instructions.
  2. Cut each Nori Sheet into 4 even squares to create 12 squares in total.
  3. Top each Nori Sheet with 1 heaped spoonful of rice and spread out slightly.
  4. Place the squares into the tray one at a time, pressing down gently so that rice is in the middle and the edges of the nori come up the sides. Air fry for 5 mins, or until the nori is crisp.
  5. Remove sushi cups from tray and serve topped with chopped avocado, smoked salmon, spring onion, Poke Sauce and White Roasted Sesame Seeds.
