A Christmas classic in Japan

Deliciously crispy chicken with Spicy Mayo to dip!

1 hour Serves 3-4

Ingredients

  • 500g skinless boneless chicken thighs, cut into bite-sized pieces
  • 1 1/2 tbsp Sushi Soy Sauce
  • 1/2 tbsp Rice Vinegar
  • 1 clove of garlic, minced
  • 1 tsp ginger paste
  • 1/2 tsp sesame oil
  • 50g cornflour
  • Vegetable oil

Instructions

  1. Slice the chicken thighs into bite-sized pieces and put them in a large bowl.
  2. Add minced garlic, ginger paste, Soy Sauce, sesame oil, and Rice Vinegar to the chicken.
  3. Combine thoroughly, making sure all the meat is coated in the marinade.
  4. Preheat your air fryer to 200°c for five minutes.
  5. Whilst the air fryer is heating, coat the chicken with cornflour.
  6. Dip the chicken pieces straight into the cornflour, coating generously.
  7. Place the coated chicken pieces in the air fryer basket in a single layer. You’ll need to cook in batches depending on the size of your air fryer.
  8. Use a brush to lightly coat the chicken in oil.
  9. Air fry the chicken in the air fryer for 20-25 minutes at 200°c, flipping the pieces a few times throughout the cooking time, and coating them with oil on the other side.
  10. Once cooked, place the chicken on a wire rack or board, and cover it with foil to keep it warm, while you continue to air fry the other batches.
  11. Serve with Spicy Mayo and enjoy!
