Spooky Halloween Miso Udon Noodles

Ingredients

  • 225g Saitaku Udon Noodles
  • 2 tbsp butter
  • 1 green onion, white and green parts separated
  • 4 cloves garlic, minced
  • 200g button mushrooms (aka your mushroom ghosts)
  • 1 tbsp Saitaku Mirin
  • 180ml milk
  • 1/2 tbsp Saitaku Miso Paste
  • 2 tbsp Saitaku Sushi Soy Sauce
  • Spooky squid ink (P.S. Can’t find squid ink? Try substituting in our Soba Noodles, or mixing in a little black food colouring for a similar spooky look!)

Instructions

  1. Cook Udon Noodles as per packet instructions. Once cooked, drain and mix in your squid ink. Set aside.
  2. Slice the mushrooms in half, creating teeth lines and poking holes for eyes using a knife and metal straw.
  3. Heat a large pan on medium heat. Melt the butter, then add in the white onions. After 1 minute, add minced garlic and cook until aromatic.
  4. Add mushrooms to the pan and mix well on high heat, tossing after 2-3 minutes.
  5. Once mushrooms have a nice sear, add in the Mirin and allow the alcohol to evaporate.
  6. Pour in milk, Miso Paste, and Soy Sauce. Allow the sauce to come to a boil then lower the heat.
  7. Mix in the Udon Noodles to coat in the sauce and season with pepper.
  8. In a small bowl, mix together the corn starch and water before pouring over the noodles on low heat. Mix well and allow sauce to thicken.
  9. Season the noodles with more Soy Sauce if required. Mix in green onions and serve whilst hot!
